Crispy Pata Recipe. Learn how to make Crispy Pata with this Filipino Recipe. Crispy Pata is fried pork legs (“Pata” means Pork Feet in spanish). This is probably the most popular Filipino Pork Recipe. Crispy Pata is easy to eat and although is high in cholesterol, the soya sauce, vinigar and diced garlic sauce makes it irresistible and keeps customers coming back for more.
In Calgary, Chopstix Restaurant (403-235-1862, located at the corner of 17th avenue and 52nd street NE), is well known for their amazing Crispy Pata and is the favourite dish customers order when dining in or take out.
Crispy Pata Recipe Ingredients:
* 1 whole front pork knuckle – cleaned, cut the toes
* 1/4 cup of mama sita’s premium vinegar
* 6 cups of water
* 1 tbsp of black peppercorn
* 6 tbsp of rock salt
* 3 tbsp of crushed garlic
* 2 bay leafs
* 4 cups of oil for deep-frying
Crispy Pata Dipping Sauce Recipe Ingredients:
* 1/4 cup of water
* 1/4 onion – diced
* 2 pcs of finger chili – sliced
* 1/4 cup of mama sita’s premium vinegar
Crispy Pata Recipe Cooking Instructions:
1. In a large casserole, combine water, rock salt, vinegar, garlic, bay leafs, black peppercorns
2. stir until salt to dissolve the salt.
3. Add the pork knuckles
4. Cover and bring to a boil
5. Simmer for 1.5 hours until the pork is tender
6. Drain in a colander
7. Set aside in the refrigerator for 12 hours or overnight to dry
8. Heat the oil
9. Deep-fry pork until golden brown and crispy
10. Drain excess oil
11. Combine all sauce ingredients
12. Serve with the sauce.

So that’s how it’s done. That’s so much work but it’s worth it. I’ll think twice before order 4 legs every time I go to a Filipino restaurant.
Some places are now frying it with chopped garlic (my new favorite).

For those in a rush, you may just let the pork stand for 15 min. to drip, then proceed with the frying, but be very careful and ready with your frying pan cover because the oil goes wild and crazy like hell the moment you put the pork in.

used to work on a restaurant before , i saw how our chef coomk this one at ang technique daw pra mging malutong na malutong ay wisikan mo ng konting tubig yung mantika hbang pinipirito mo yung pata…..yung tipong yung apoy makikita mo sa ibabaw…….
